1 clean tainha of 1.5 kg opened on both sides, without dorsal spine
Salt and black pepper to taste
1/4 cup all-purpose flour
3 scallions or green onions thinly sliced
400g potatoes peeled and thinly sliced
2 tablespoons olive oil
2 cups fresh mushrooms thinly sliced
Fresh parsley or thyme to taste

Rinse the fish and pat it dry thoroughly
Season it inside and out
Dredge it in flour and place it in a greased baking dish
Put it in a hot oven (400°F) for 20 minutes
Meanwhile, sauté the scallions and potatoes in olive oil for two minutes
Add the mushrooms, salt, pepper, and thyme. Reserve
When the fish has been in the oven for 20 minutes, remove it and place it on a foil-lined baking sheet
Cover it with the sautéed mixture, close the foil tightly, and put it back in the oven for another 20 minutes
Serve with the foil open
