1/2 cup crumbled Gorgonzola cheese
1 cup freshly whipped or canned heavy cream
2 spoons of red wine vinegar
Salt and black pepper to taste

Beat all the ingredients together very well
Chill in the refrigerator for 1 hour to allow flavors to meld together
Serve chilled, using 1 1/2 cups or about 60 tablespoons.
