Begin by making an orange juice mixture
In medium heat, cook the orange and lime juices with sugar for six minutes (without boiling) and then remove from heat

Add gelatin and stir for two more minutes before removing from heat

Chill in a cold bath

Next, prepare the batter by pouring cold water over the egg
Beat with an electric mixer

Add 200g of flour (reserving 100g for dusting the ficus)

Mix well

Dust the ficus fruit with the reserved flour and then coat in the batter

Fry in a mixture of canola and sesame oils at 180°C until golden brown

Remove from heat, let cool, and cut each fig into eight pieces

Place a ring of orange juice mixture on each serving plate
In the center, place a scoop of fig sorbet
