A basic recipe for egg yolk threads
Spread a large and deep bowl with 2 thick wire racks, like a trellis
Prepare the egg yolk threads as in the basic recipe
As you remove the cooked threads from the pan (next step), hang them on the prepared trellis to drain excess syrup
Make several piles of egg yolk threads and let them dry for 1 hour
When shaping the eggs, let the pan with remaining syrup sit over low heat until it reaches a soft ball consistency
To check the point, pour a little syrup into a cold water cup and try to join all the syrup back together with your fingers until it forms a soft ball
If easy, you're at the right temperature
Remove the syrup from the heat and stir with a wooden spoon
Don't let it thicken
Dip the egg yolk threads in this syrup and let them dry
Remove the egg yolk threads from the trellis and serve at room temperature
