Preheat the oven to high temperature
Cut the tomatoes lengthwise
Arrange in a large baking dish with the cut side facing up
Mix the olive oil and salt, then sprinkle over the tomatoes
Bake for 1 hour
Flip the tomatoes, reduce oven temperature, and roast for another 1 hour or until tender
Remove from the baking dish with a spatula and let cool.
