4 large tomatoes, peeled

1/4 cup chopped pimientos

Remove the tomato skins and place them with the opening facing down to drain well
Mix together the cheese, eggs, pickles, pimientos, and mayonnaise
Mash well
Fill the tomatoes
Refrigerate
Cut each tomato almost in half, forming petals
Open the 'petals' well and serve over well-washed and drained lettuce leaves
