Preparation:

Boil the sweet potatoes with skin in water and salt, taking care not to overcook them

Once cooked, drain and peel the sweet potatoes

Cut into thin slices

Fill the tart shell with a layer of puff pastry and top it with the sweet potatoes

In a bowl, mix the cheese with heavy cream

Add milk, garlic, nutmeg, white pepper, cognac, and egg yolks
Mix well and pour over the sweet potatoes
