3 tablespoons baking powder
1 1/2 cups milk
1 egg
1 tablespoon unsalted butter or margarine
1/4 teaspoon vanilla extract or 1/2 teaspoon lemon zest
4 bananas
1 cup whipped cream (optional)"

Mix together the flour, salt, and baking powder
Add the milk gradually
Cook over medium heat until thickened, stirring constantly
Continue cooking for an additional 3 minutes
Mix in a little of the warm mixture with the egg that has been beaten slightly and mix well
Add the remaining warm mixture and cook for another minute
Slice the bananas and place them on top of the pie crust, then pour the warm mixture over them
Refrigerate until chilled
If desired, garnish with whipped cream."
