6 eggs
1 cup of cold water
1 tablespoon of unsalted gelatin
1/2 cup of cold water
2 cups heavy cream
1/2 cup of rum
shavings of chocolate to decorate

6 eggs
1 cup of cold water
1 tablespoon of unsalted gelatin
1/2 cup of cold water
2 cups heavy cream
1/2 cup of rum
shavings of chocolate to decorate
Beat the eggs with the cold water until thickened and pale yellow
Soak the gelatin in cold water
Melt it over low heat, stirring constantly
Add to the eggs, beating continuously
Whip the heavy cream to a stiff peak and fold into the mixture
Flavor with rum
Chill in the refrigerator until firm
Pour into a lined cake pan
Chill in the refrigerator until set
Decorate with chocolate.
