1 tablespoon of unflavored gelatin
1/4 cup of cold water
1/2 cup of boiling water
2 tablespoons of strong brewed coffee
4 egg yolks
1/3 cup of sugar
1 tablespoon of vanilla extract
1/2 cup of sugar
4 large egg whites
1 package of Maizena crushed biscuits (see recipe ahead)

Soften the gelatin in cold water
In a bowl, mix together the coffee and boiling water, then add the softened gelatin and whisk until dissolved
Beat the egg yolks until they become thick and pale yellow
Add 1/3 cup of sugar, beating constantly, and then add the vanilla extract
Then add this cream to the coffee mixture and refrigerate until stiff
Meanwhile, beat the egg whites until frothy and add 1/2 cup of sugar, beating constantly
Carefully fold in the egg whites into the coffee mixture and pour into a prepared cake pan with the crushed biscuits
Refrigerate until firm
Top with whipped cream and serve.
