1 basic tart crust recipe
For the cream
1/4 cup all-purpose flour
1 cup milk
2 egg yolks
1/3 cup sugar
For the filling
4 kiwi slices
2 orange segments
10 red grape halves
For the topping
1 envelope unflavored white gelatin
1/2 cup water
1 tablespoon sugar

Prepare the tart crust according to the basic recipe
Mix all cream ingredients well
Heat over medium heat, stirring constantly, until thickened
Remove from heat and let cool, covered with plastic wrap (to prevent a skin from forming)
Spread on the prepared crust and top with fruits in a decorative manner
Prepare the topping: sprinkle gelatin over water
Heat in a bain-marie, until dissolved
Remove from heat, add sugar, mix well, and let cool to thicken slightly
Spread with a brush over the fruits to form a topping
Chill in the refrigerator until serving time
Serve 12 portions
