Dough
Place the confectioner's sugar, cold butter, and salt in a food processor
Process for 3 minutes
Unplug, add the flour and egg, and process until well mixed
Make a dough ball and divide it into two equal parts
Wrap each part with plastic wrap
One of them should go to the refrigerator for 1 hour, while the other can be frozen for later use
Preheat the oven to moderate temperature
Place the chilled dough on a flat surface using a rolling pin
Place it over the ring, supported by a baking sheet, so that it covers the bottom and sides (1)
Mold the dough to exceed the ring's height
This will serve as support, preventing the cake from collapsing (2)
Put it in the oven for 30 minutes or until the dough is lightly golden
Remove from the oven and let cool

Filling
Mix all ingredients in a bowl and place it in a bain-marie over low heat, stirring occasionally, for 15 minutes or until slightly thickened
Pour the still-warm filling over the baked dough
Put it back in the oven until firm, about 25 minutes (4)
Remove from the oven and let cool
Carefully remove from ring onto a plate
Hold an orange peel-free orange and cut off the white pith with a sharp knife
To separate the segments and remove them, cut between the pulp and the membrane that separates them (5)
Arrange the segments in a circular shape (6)
Distribute passionfruit seeds and drizzle the cake with honey (7)
Sprinkle pistachio around the plate.
