1 small block of Minas cheese (400g) fresh
2 eggs
2 tablespoons all-purpose flour
Filling:
1 medium onion, finely chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 cup cooked corn kernels
1/3 cup chopped fresh parsley
2 tablespoons grated Parmesan cheese

Grate the cheese, place it in a bowl with eggs and flour
Beat well
Spread onto a round cake pan (24cm diameter), bake in a moderate oven preheated to 170°C until golden brown
Prepare the filling: sauté the onion in butter until softened
Add flour and cook well, stirring constantly
Add milk gradually, stirring constantly and cooking until thickened
Combine cooked corn and parsley
Mix well and remove from heat
Place over baked cake and sprinkle with grated Parmesan cheese to taste
Serve 4-6 portions.
