For the dough
2 1/4 cups all-purpose flour (210 g)
12 tablespoons (3 sticks) unsalted butter, cut into small pieces
1/4 cup granulated sugar
2 large eggs
1/2 tablespoon milk
4 drops vanilla extract

6 tablespoons (3 sticks) unsalted butter, melted
3 large eggs
3/4 cup granulated sugar
2 pears, peeled and cut into quarters

For the dough

Prepare the dough: Mix the flour, butter, and sugar in a processor until it forms a crumbly mixture
Add the eggs, milk, and vanilla extract and continue mixing until a dough forms
Remove the dough from the processor and place it on a floured surface
Shape into a ball, flatten, wrap in plastic film, and refrigerate for at least 1 day or freeze for 30 minutes
For the filling: Mix the flour, butter, eggs, and sugar in a bowl until smooth
In a separate bowl, melt the butter over high heat until golden brown
Gradually add to the flour mixture and reserve
Divide the dough into 4 portions and work each one between your fingers until it becomes pliable
Join all the portions together forming a ball (do not overwork the dough)
Open it on a floured surface, leaving it with a thickness of 3 mm, and line a low-sided mold, 24 cm in diameter, with a removable bottom
Refrigerate for 15 minutes
Preheat the oven to 180°C (moderate)
Cut each pear slice into pieces about 3mm thick, parallel to its length
Arrange them over the dough, forming a beautiful design
Pour the melted butter over the fruit
Bake in the preheated oven for 1 hour or until the surface is golden brown
Remove from the oven, let it cool, and unmold
After it cools, dust with cake decorator's sugar
Yield: 12 pieces
