1/2 basic dough recipe
Filling
1 cup (chopped) mixed vegetables (canned or fresh)
1/4 cup chopped onion
2 tablespoons unsalted butter
1/2 cup diced zucchini
1/2 cup diced bell pepper
1 tablespoon grated ginger
2 eggs
1 egg white
Salt and black pepper to taste

Assemble individual tart shells using basic dough recipe and bake according to instructions
Set aside
Sauté the onion in butter, then add zucchini and bell pepper
Cook for 2 minutes and stir in mixed vegetables and ginger
Taste and adjust seasoning
Cook for an additional 2-3 minutes and remove from heat
Distribute the vegetables over the filling and beat eggs with egg white
Pour over the filling and bake in a medium preheated oven until firm
Serve warm.
