In a bowl, combine the flour, butter, eggs, yeast, and salt
Mix with your fingertips and gradually add the milk until you get a soft dough

Wrap in plastic wrap and refrigerate for 30 minutes

Heat a skillet over medium heat and cook the ground beef, stirring frequently

Add the onion, garlic, tomato, and green olives and cook for three more minutes
Add salt and pepper to taste and let it cool
Assembly

Preheat the oven to 180°C
Bake the dough and cut out 24 circles using a 5 cm cookie cutter

Place a portion of the filling on 12 of the circles and cover with another circle
Use a fork to seal the edges of the tartines

Use a cookie or flower-shaped cutter to cut out any excess dough and decorate the tartines

Arrange them in a baking dish, brush with egg yolk, and bake for 30 minutes or until golden.
