4 trout fillets
salt and pepper to taste
4 tablespoons of fresh or canned mushrooms, finely chopped
1 tablespoon of finely chopped onion
2 tablespoons of finely chopped green onions
1 tablespoon of chopped parsley
2 tablespoons of melted butter or margarine
4 eggs
3 tablespoons of cognac
5 tablespoons of crispy bread crumbs
5 tablespoons of grated cheddar or parmesan cheese
black pepper to taste
4 trout fillets

Season the trout fillets with salt and pepper to taste
Set aside
Preheat a baking dish
Line the bottom of the dish with the mushrooms, onion, green onions, and parsley
Place the trout fillets on top and drizzle with melted butter or margarine
Cover with aluminum foil, greased side up, and bake at 400°F for 10 minutes
Beat the eggs well and mix in the cognac
Remove the foil and spread this mixture over the fish
Mix the bread crumbs and grated cheese together and sprinkle on top
Season with black pepper to taste
Finally, season with a little more black pepper
Serve hot for 4 people.
