1 kg of beef ribs cut into portions
2 chopped onions
4 cloves of garlic minced
salt and pepper to taste
2 tablespoons of olive oil
5 seedless tomato pieces
1 tablespoon of vinegar
1 sprig of parsley chopped
3 green scallions chopped
1 kg of cassava peeled and cut into pieces

Season the beef ribs with onion, garlic, salt, pepper, and a drizzle of olive oil
Fry them in a pan for a few minutes until they brown
Then add the tomatoes, vinegar, parsley, green scallions, and enough water to cover the beef
Simmer
Cook it
When the beef is almost tender, add the cassava and enough water to cook it until it's tender as well
Serve 4-6 portions.
