1 large onion, peeled and finely chopped

1/2 cup (1 stick) unsalted butter or margarine
1 cup heavy cream
1 cup milk
1 tablespoon chopped fresh chives
1 teaspoon salt

Sauté the garlic for 5 minutes in a large pot
Add the potatoes, salt, and enough water to cover
Bring to a boil over high heat, then reduce heat and simmer for 45 minutes
Blend in a blender or food mill
Chill
Refrigerate for at least an hour
Just before serving, add milk and cream
Season with black pepper to taste
Sprinkle chopped chives on top.
