3/4 cup of grated mozzarella cheese (110g)

In a medium bowl, combine all the ingredients, except for the veal escalopes, mozzarella cheese, and parsley
Place in a hot oven for 2 minutes
Reduce heat to medium and let cook for an additional 2 minutes and 30 seconds. Reserve
In a 20.5 cm x 30 cm baking dish, place the veal escalopes and cover with parchment paper
Place in a microwave on medium heat for 7 minutes or until the meat is cooked to desired doneness
Drain the liquid that remains in the baking dish
Brush with reserved sauce and spread mozzarella cheese and parsley on top
Cover with parchment paper and bake in a moderate oven for 2 minutes or until the cheese melts
Serve immediately
