Step 1
Beat the egg whites with an electric whisk (or a fork) until they form soft peaks - if you prefer, use a stand mixer for five minutes
Fold in the melted chocolate and mix until smooth and creamy
Step 2
In another bowl, whip the heavy cream until it forms stiff peaks
Gently fold in the chocolate mixture and mix delicately
Step 3
Place this mixture into a piping bag with a flared tip and fill x soufflé dishes - which can be made from chocolate or purchased pre-made - with it.
