A quarter cup of extra virgin olive oil
One minced garlic clove
Two 200g cod fillets, skin removed and scaled, with the edges peeled
Half a green pepper, sliced
Half a red bell pepper, sliced
TWO medium-sized potatoes, boiled in water and salt
One medium onion, sliced
One can of cooked corned beef, steamed
A tablespoon of hot paprika
A teaspoon of salt
Pesto to taste

Step 1
Heat the olive oil in a frying pan and fry the garlic and cod with the skin facing down
Reserve the fish and fry the peppers
Step 2
Mix in the potatoes, onion, and corned beef
Season to taste
Finally, add the hot paprika
Cover and cook for about eight minutes over low heat
Before serving, sprinkle with salt and pesto.
