3 ripe pineapples without skin

For the syrup

Cut the pineapple into 3 cm thick slices and remove the core
Place in a stainless steel, aluminum or enameled cast iron pot
Add the water with baking soda and bring to a boil
Remove the fruit with a slotted spoon and reserve (discard the boiling water)
In the same pot, mix well the syrup ingredients and cook without stirring until it reaches the desired consistency, or thick syrup stage (check by dropping some of the syrup from a spoon; if it forms a thread and when lifted, forms a drop at the tip of the spoon)
Add the pineapple and simmer for 15 minutes or until the syrup returns to its original consistency
Serves 20 portions.
