Grease six small pudding molds with butter or non-stick cooking spray, then line the bottom of each mold with parchment paper and reserve
Slice the zucchinis into horizontal strips and reserve
Beat the eggs, heavy cream, cheddar cheese, and salt in a blender until smooth
Place the zucchini slices into the creamy mixture, being careful not to break up the zucchini, and divide among the prepared molds
Bake in a medium preheated oven until golden brown
Serve immediately.
