3 scallions cut into 1/2 cm slices
4 slices of bacon (90g)
1 small onion, finely chopped (50g)
1 tablespoon all-purpose flour
1/2 teaspoon paprika
4 tablespoons apple cider vinegar
salt and black pepper to taste

Cook the aipo until it's tender
Drain, reserving half a cup of liquid
Fry the bacon until crispy
Remove from the skillet
Remove all excess grease
Leave 2 tablespoons and put back into the skillet
Add the onion and fry until lightly browned
Add flour and paprika
Add the reserved liquid and vinegar
Cook, stirring, until thickened
Add the aipo and stir
Season to taste and sprinkle with crumbled bacon
Serve 6 portions.
