Cook the sweet potatoes in 2 cups of orange juice for 2 minutes
Peele the sweet potatoes
Place them in a baking dish to dry in a moderate oven for about 15 minutes
Mix together 2/3 cup of orange juice, grated orange peel, salt, and sweet potato, and cook until it forms a soft ball by leaving some of the mixture to fall into cold water
Then shape it into a soft ball
Remove from heat and combine with the sweet potatoes
The syrup will thicken
When this happens, remove the sweet potatoes and spread them on a sheet of parchment paper or a greased baking dish so they can dry.
