Cook the rice in butter over medium heat, stirring until it turns yellow
Add the onion and continue cooking, stirring until the onion is soft
Add the broth and let it simmer, stirring occasionally
Reduce the heat and cook slowly in a covered pan, until the rice is cooked
Season to taste, add the cheese, and mix well
Place in a ring-shaped mold greased with butter and press gently
Unmold immediately onto a serving plate
Serve hot.
