1 bunch of green onions
3 tablespoons of olive oil
1 large onion, chopped
1 1/2 cups of uncooked white rice
3 cups of chicken or water broth
Salt and black pepper to taste

Wash and dry the green onions well
Cut off the root end
Chop the white and green parts finely
Heat the olive oil in a medium saucepan
Add the onion and cook over low heat, stirring frequently for about 10 minutes
Add the green onions and rice
Cook over high heat for another 4 minutes, stirring occasionally
Add the broth or water
Stir well and let it come to a boil over strong heat
Cover, reduce heat to medium, and cook for about 10 minutes, until the rice is tender and all the liquid has been absorbed
Remove from heat and keep covered until serving time
Just before serving, check the seasoning and add salt and black pepper to taste
Serve in a serving dish and sprinkle with parsley.
