2 cups of uncooked and rinsed rice, drained and fluffed
1/2 cup of grated cheese
1 carrot cut into cubes
1 bell pepper cut into cubes
2 tomatoes without seeds cut into cubes
2 cups of small broccoli florets
Salt to taste
4 cups of boiling water
1 envelope of vegetable broth mix
3 tablespoons of butter

Preheat the oven to 350°F
In a large baking dish, combine the rice, cheese, carrot, bell pepper, tomato, and broccoli florets
Season with salt, add the water, vegetable broth mix, and butter
Mix well, cover with aluminum foil, and bake for about 40 minutes or until the liquid has been absorbed
Serve immediately.
