In a large bowl, combine the rice, olive oil, salt, and curry powder
Leaving to microwave for 1 minute at high power

Add the bell pepper, onion, zucchini, peas, and mushrooms
Add the chicken broth and orange juice

Cover and microwave for 15 minutes at high power, stirring halfway through or until the rice is tender
Let it rest in the microwave for an additional 5 minutes before serving.
