2 cups chicken or beef broth
Salt and black pepper to taste

Heat the olive oil and quickly fry the parsley and scallion
Add the rice and stir well
Pour into a baking dish
Add the broth
Cover with aluminum foil
Place in a moderate oven (180°C) preheated for about 30 minutes, or until the rice is cooked and all liquid has been absorbed
Mix gently with a fork to check the seasoning
Let it rest for 5 minutes
Serve with pork or beef, roasted chicken or turkey
