3 1/2 cups of skimmed milk
1/4 cup of uncooked rice
8 tablespoons of raisins
1 beaten egg
1 teaspoon of vanilla extract
1/2 teaspoon of grated orange or lemon zest
Add to taste
1/4 teaspoon of ground cinnamon

Combine the rice and milk in a non-stick saucepan
Cover and cook over low heat for 1 hour or until the rice is tender
Add the raisins during the last 10 minutes of cooking
Remove from heat, add the egg and mix well
Return to low heat for 2 minutes
Remove from heat and add the vanilla extract, grated zest, and to taste
Pour into a serving dish, sprinkle with cinnamon, and refrigerate
Serves 5 portions at approximately 112 calories each.
