2 tablespoons of olive oil
1 tablespoon of ground cumin
1 cinnamon stick
2 bay leaves
1/4 cup of saffron threads
1 diced onion
Salt to taste
2 cups of basmati rice (or, if desired, use long-grain rice)
1 liter of boiling water
1 cup of chopped fresh parsley

Heat the olive oil over medium heat in a large saucepan
Add the cinnamon stick, cumin, bay leaves, saffron threads, salt, and fry for 1 minute
When the aromas start to mellow out, add the rice, onion, and stir well
Fry for an additional minute
Add the boiling water in one go and cook for 15 minutes or until the rice is tender

Remove from heat and let rest for 5 minutes
Stir well and add the parsley
Serve.
