Beat the eggs with 1/4 cup of milk
Mix in the flour
Add the remaining milk and salt, beating until uniform
Mash the sweet potatoes, adding them to the mixture as needed
Shape the pancakes slightly greased molds using 1/4 cup of batter for each pancake
Fold the baked pancakes into four and top with fruit gelato or berry sauce
These pancakes can accompany meat dishes with sauce
