Rinse the rice thoroughly and place it in a pot
Add the water and cook over medium heat
While that's happening, warm the olive oil and caramelize the onion, garlic, and thyme
When the water has almost evaporated from the rice, add salt and the caramelized mixture; mix well and remove from heat
Divide the rice into two parts
In one part, add the grated carrot and saffron; mix well and transfer to a pot
In the other part of rice, add the chopped spinach and also transfer it to a pot
Return both pots to the heat and let the water evaporate.
