1 cup of fresh heavy cream
3 tablespoons of olive oil
1 1/2 kg of cod fillets
400 g of fresh fava beans
4 cloves of garlic
3 sprigs of thyme
1 medium onion

Descale the cod (see page 34)
Remove the skin and bones
Dry with paper towels

Place the fava beans in a pot and cover with water
Add the thyme, parsley, and bay leaf to the pot, making sure not to mix them with the broth
Fry the cod fillets for 3 minutes on each side
Remove from heat and reserve

In a skillet, heat the olive oil and add the whole garlic cloves
Cook until they start to brown
Add the cod fillets and fry for 3 minutes on each side

Add the fava beans, heavy cream, and seasonings
Reduce heat and cook for an additional 10 minutes, stirring occasionally
Sprinkle with chopped scallions and serve.
