1 cup fresh heavy cream
3 tablespoons olive oil
11/2 pounds salted cod fillets
400g fresh fava beans
4 cloves of garlic
3 sprigs of thyme
1 medium onion
1 bay leaf
1 branch of parsley
Chopped green scallion to taste

Descale the cod
Remove skin and bones
Dry with paper towels
Place fava beans in a pot and cover with water
Add thyme, bay leaves, and parsley to the pot
Bring to a boil and add garlic -- and simmer for 30 minutes or until fava beans are tender
Strain and reserve
In a frying pan, heat olive oil and sauté garlic cloves whole
Cook until they start to brown
Add cod fillets and cook for 3 minutes on each side
Add fava beans, heavy cream, and seasonings
Reduce heat and simmer for an additional 10 minutes, flipping the fish once halfway through that time
Dust with chopped green scallion and serve.
