4 medium zucchinis
125 g of chopped linguica
1/4 cup of chopped onion
1/2 cup of breadcrumbs
1 egg, lightly beaten
1/2 cup of grated Parmesan cheese
salt and pepper to taste

Cook the whole zucchinis in boiling water until they are cooked but still firm, 7-10 minutes
Cut them in half lengthwise
Remove the pulp from the zucchinis and mash it
Reserve the shells
Cook the linguica and onion
Remove excess fat
Add the mashed zucchini to the mixture
Reserve 2 tablespoons of cheese and add the remaining ingredients to the mixture
Taste and adjust seasoning as needed
Place them in the reserved zucchini shells
Arrange these on a flat baking dish
Dust with reserved cheese
Bake in a moderate oven for about 25 minutes
Serve 4 portions.
