After boiling the peeled sweet potatoes in salted water, remove them from the heat and mash them coarsely with a fork
Spread them out in a layer in a well-greased baking dish
Top with peas and tomatoes, skinless and mashed, seasoned with salt and pepper
Drizzle with a little olive oil and cover the mixture with slices of mozzarella cheese
Place it in a hot oven for about 25 minutes or until the cheese is well melted
