1 kg of sweet potatoes, well washed and peeled, cut into thin slices

1 1/2 teaspoons of salt
3 tablespoons of fresh thyme or 1 tablespoon of dried thyme

Place the sweet potato slices in a dish
Add the olive oil and salt
Mix well and spread into a lightly oiled baking dish
Sprinkle with thyme
Cover with aluminum foil and bake in a preheated moderate oven (180°C) for about 30 minutes
Remove the foil and bake for another 20 minutes until the sweet potato is tender
Serve warm.
