Preheat the oven to medium temperature
Arrange the sweet potato chunks in a medium-sized refractory dish and set aside
In a small saucepan, mix together the butter, honey, and lemon juice and bring to a medium heat, stirring occasionally until the butter melts
Pour this mixture over the sweet potatoes and season with salt and pepper
Place in the oven, stirring occasionally, for 50 minutes or until the sweet potatoes are tender and caramelized
