Wash and peel the potatoes
Cut them into thin slices and wash in cold running water until the starch is removed, then drain well with a kitchen towel
Squeeze out excess moisture from the potato slices with a clean cloth
Heat oil in a small pan over medium heat and fry the potatoes slowly as they start to brown
Drain on paper towels and season with salt.
