1 kg of sweet potatoes

Peel the sweet potatoes and wash them thoroughly
Cut into thin strips, 5 cm long
Place on a kitchen towel to dry
Heat plenty of coconut oil in a deep frying pan
Place a strainer over the pan, so that it's fully immersed in the oil
Heat well
Add the sweet potato sticks in small batches
Gently agitate the strainer once or twice to prevent the sticks from sticking together
Let them fry until they're lightly golden
Remove the strainer from the pan and place the sweet potatoes on paper towels
A little before serving, re-submerge the sweet potatoes in hot oil and fry until well browned and crispy
Allow excess oil to drain off, sprinkle with salt, and serve immediately.
