Peel the sweet potatoes and boil them in salted water for 7 minutes after they're cooked
Drain and let cool down
After that, grate the sweet potato using the coarse side of a grater

In a bowl, mix together the mozzarella cheese and broccoli florets
Season with salt and pepper to taste
Set aside

Heat some olive oil in a non-stick skillet over medium heat
Add half of the sweet potato
Distribute the filling on top of it
Cover with the remaining sweet potato
Cook for 5 minutes, flipping halfway through
Serving hot.
