2 medium sweet potatoes (200g)

5 slices of Minas cheese (each 5cm thick)

Wash the sweet potatoes with their skin
Dry, remove the skin, and cut into fine slices
Season
In a 20cm diameter frying pan, melt the butter over low heat
Add the sweet potato slices, covering the entire bottom of the pan
Press down gently
Place the cheese slices on top and cook over low heat with the lid closed until the bottom layer is golden brown
Flip the mixture onto a plate and return it to the frying pan with the cheese side down
Cook over low heat with the lid closed until the other side is also golden brown
Remove from heat and flip onto a plate
Serve with chopped parsley and hot pepper flakes
