Wash the potatoes thoroughly with a vegetable brush, leaving the skin on
Arrange them in a baking dish and bake in a medium oven at 40 minutes to 1 hour or until they are tender
Remove the potatoes from the oven, transfer them to a serving platter and sprinkle a small amount of fresh parsley on each one to slightly mash them
Sprinkle salt over the top of the mashed potatoes and drizzle with olive oil to taste
Serve immediately as a side dish for general meat accompaniments.
