Thoroughly wash the potatoes and boil them with their skin for 20 minutes or until they're tender
While that's happening, blend in a processor or blender the onion, garlic, olive oil, and a pinch of salt
Blend until you get a smooth paste

Drain the potato and, while it's still warm, mix it with the blended seasoning, olives, oregano, pepper, and salt to taste
Mix well
Let it cool, then place it in an airtight container and refrigerate for at least five days
Serve as an appetizer
