5 to 6 slices of smoked bacon
5 cloves of garlic, minced
Salt
1 eggplant, peeled and cut into 2cm thick strips
Salt and black pepper to taste

Cut the bacon slices into strips and fry until crispy
Mix the minced garlic with a pinch of salt and cook until soft but not browned
Add the eggplant and mix well
Cook over medium heat in a covered pan for 5 minutes, or until the eggplant is almost tender
Mix well
Cook slowly again, covered, for another 5 minutes
Taste and season with salt and black pepper to taste
If desired, serve with tomato slices
