In a non-stick skillet, spread 1 tablespoon of olive oil, layering beef, onion, tomato, and parsley
Drizzle with remaining olive oil, distributing potato slices and finishing with any remaining oil
Cover the skillet and cook over low heat until the potatoes and beef are cooked through
Sprinkle salsa and serve immediately.
