1 Mix the flour with cold water
Let it rest for half an hour and then squeeze out any excess liquid
2 Add the ground beef and seasonings and work the mixture like dough (get your hands wet when kneading the mixture)
3 Add the onion, a spoonful of fresh parsley, and mix again for about 10 minutes
Try a small amount to see if the flour is well incorporated
4 Shape into patties and flatten slightly
Dress with remaining parsley and, if desired, a green onion slice.
